Ingredients :
- 60g white and red quinoa
- 20g flour
- 1/2 beaten egg
- 250ml milk
- 80g smoked trout
- 2 asparagus spears
- 40g spinach
- 2 chillies, chopped
- 1 egg
How to Cook :
Boil the quinoa for 12 minutes, drain, whisk in 10g flour, beaten egg, 125ml milk and a pinch of salt and sugar. Shape into a muffin, fry in a drop of olive oil until golden. Grill the trout and blanch the asparagus and spinach. To make the sauce, sauté the chillies, add the remaining milk and 10g flour and simmer, whisking until thick. Blend then season. Poach your egg, place it on the muffin with the greens and drizzle over the sauce.
Super seed: Just 100g trout twice a week is all you need to give your brain power and heart health a mighty lift. Nothing fishy about that.
